The Dish | White Chicken Chili

This recipe delivers fantastic flavor without a lot of fuss, making it a perfect easy weeknight meal the whole family will enjoy. Rotisserie chicken saves time, while the combination of mild poblanos, a touch of jalapeño, and aromatic spices creates a comforting and satisfying chili. A squeeze of fresh lime brightens everything up!

INGREDIENTS:
  • 2 (14.5 oz) cans white beans
  • 1 Tbsp canola oil
  • 1 med jalapeño, minced
  • 2 med poblano, chopped
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • Salt & pepper
  • 1 Tbsp cumin
  • 1 ½ tsp coriander
  • 1 tsp ancho chili powder
  • 4 cups low-sodium chicken broth
  • 2 limes, juiced (+ wedges)
  • 1 rotisserie chicken, shredded
  • ¼ cup cilantro, chopped
  • Assorted optional garnishes: Wedge of lime, sour cream, tortilla chips, slices of avocado
DIRECTIONS:
  1. Drain/rinse beans. Mash half.
  2. Heat oil in pot (med-high) and add peppers, onion, garlic and sauté (5 min). Season with salt and pepper.
  3. Add cumin, coriander, chili powder (1 min).
  4. Stir in broth & lime juice. Simmer (20 min).
  5. Add beans. Simmer (20 min). Adjust seasoning.
  6. Stir in chicken & cilantro. Simmer (5 min).
  7. Serve w/ sour cream, avocado, chips & lime, if using.
