INGREDIENTS:
- 2 (14.5 oz) cans white beans
- 1 Tbsp canola oil
- 1 med jalapeño, minced
- 2 med poblano, chopped
- 1 large onion, chopped
- 4 garlic cloves, minced
- Salt & pepper
- 1 Tbsp cumin
- 1 ½ tsp coriander
- 1 tsp ancho chili powder
- 4 cups low-sodium chicken broth
- 2 limes, juiced (+ wedges)
- 1 rotisserie chicken, shredded
- ¼ cup cilantro, chopped
- Assorted optional garnishes: Wedge of lime, sour cream, tortilla chips, slices of avocado
DIRECTIONS:
- Drain/rinse beans. Mash half.
- Heat oil in pot (med-high) and add peppers, onion, garlic and sauté (5 min). Season with salt and pepper.
- Add cumin, coriander, chili powder (1 min).
- Stir in broth & lime juice. Simmer (20 min).
- Add beans. Simmer (20 min). Adjust seasoning.
- Stir in chicken & cilantro. Simmer (5 min).
- Serve w/ sour cream, avocado, chips & lime, if using.
