Flavorful pork in a warm naan with a creamy, herby yogurt sauce is a quick weeknight meal. You could also use pita in place of naan. Serve with cucumbers, tomatoes, sauteed onions, more herbs, or whatever sounds good. Za’atar is the star here, giving the dish a herby, citrusy taste.
INGREDIENTS:
Marinade
- 1 pork tenderloin, about 1½ pounds
- 3 tablespoons olive oil
- 1½ tablespoon za’atar, plus more for sprinkling at the end
- 2 garlic cloves, finely minced
- 1 teaspoon honey
- ¾ teaspoon kosher salt
- Ground black pepper
- 1 tablespoon fresh lemon juice (see note)
- ½ teaspoon ground cumin, optional
Yogurt Sauce
- 1 cup Greek yogurt
- 1 tablespoon fresh lemon juice, or red wine vinegar
- 1 tablespoon olive oil
- 1/2 tablespoon fresh dill, chopped
- 1-2 tablespoons fresh mint, chopped
- ½ teaspoon kosher salt
- Ground black pepper
- 1 garlic clove, minced (optional)
DIRECTIONS:
- Butterfly the pork tenderloin, being careful not to cut all the way through. Open it like a book and gently flatten to an even thickness. Make the marinade by combining all ingredients (leave the lemon juice out if you are marinating more than 2 hours).
- Marinate the meat for 2-24 hours, add the lemon juice in the last hour or two before grilling. NOTE: If preparing the night before, leave the lemon juice out of the marinade and add it just an hour or two before grilling.
- Meanwhile, stir together all of the yogurt sauce ingredients (I don’t use garlic here, but feel free to use it) in a bowl and set aside.
- Remove the pork from the refrigerator about 20-30 minutes before grilling. Heat the grill to medium-high. Grill the pork for several minutes per side, turning as needed, until nicely browned and the thickest part reaches 145 degrees.
- Transfer to a cutting board and let rest for 10 minutes. Slice thinly across the grain.
- Warm naan on the hot grill, being careful not to burn, and turning to get each side nice and toasty — watch it closely.
- Serve warm naan, grilled pork, yogurt sauce with a sprinkle of zaatar. and any other ingredients that you want — tomatoes, cucumbers, sauteed onions, or herbs.
