Spicy tuna poke is one of those dishes I never get tired of. Over the years, I’ve enjoyed poke on every island in Hawaii, and I still can’t get enough. There are so many beautiful versions, but this one has become a favorite. It is bright, clean, a little spicy, and perfect for warm weather, easy entertaining, or a simple meal that still feels special. I hope you enjoy making it at home. INGREDIENTS
Rice
- 2 cups sushi rice
- 3 cups water
- 3 tablespoons rice vinegar
- 2 tablespoons mirin
- 1 tablespoons sugar
- 1.5 teaspoon sea salt
Poke
- 18 to 20 oz sushi-grade bigeye tuna, cut into ½ inch cubes
- 3 tbsp Kewpie mayo
- 1½ tablespoon Sriracha
- 1 teaspoon toasted sesame oil
- 1½ tablespoon toasted sesame seeds
- ½ teaspoon finely minced garlic
- 3 tablespoons scallions, thinly sliced
- ½ to ¾ tsp Hawaiian pink sea salt, to taste
Garnish
- 1 avocado, diced
- ¾ cup prepared seasoned seaweed salad
- 1 tablespoon scallions, thinly sliced
- Extra toasted sesame seeds, optional
Instructions:
1. Make the rice
Rinse sushi rice until the water runs mostly clear. Cook with water. While still warm, fold in rice vinegar, mirin, sugar, and sea salt. Let cool slightly.
2. Cut the tuna
Using a sharp knife, cut the bigeye tuna into clean ½ inch cubes. Keep chilled until ready to mix.
3. Make the spicy poke
In a chilled bowl, gently combine tuna, Kewpie mayo, Sriracha, sesame oil, sesame seeds, garlic, scallions, and Hawaiian pink sea salt. Fold lightly so the tuna stays intact.
4. Prep the garnish
Slice scallions thin. Use prepared seasoned seaweed salad as purchased, chopping lightly if the pieces are long. Dice avocado just before serving.
5. Assemble
Spoon sushi rice into four bowls. Top with spicy tuna. Garnish with avocado, seasoned seaweed, scallions, and optional extra sesame seeds.
