Sometimes the most basic ingredients are all you need to pull together something really tasty. This is a delicious, easy to prepare recipe that works for both the weekday family dinner — and for company.
INGREDIENTS:
- 2 lbs boneless chicken breasts
- ⅓ cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 8 Tbs butter (4 Tbs for sauteing chicken breasts and 4 Tbs for the sauce preparation)
- 1 cup white wine
- 2 tsp sugar
- ½ cup fresh lemon juice
- Lemon slices to top chicken breasts
- Chopped parsley for garnish
DIRECTIONS:
- Preheat oven to 350.
- Trim chicken breasts. Slice breast pieces as necessary to make them about the same thickness.
- Mix flour, salt and pepper on a plate. Dredge chicken pieces in the flour mixture. Save the rest of the flour mixture to add to the sauce later.
- Melt 4 Tbs of the butter in a shallow sauté pan. Brown floured chicken breasts on each side until golden brown.
- Arrange sauteed chicken breasts in a rectangular baking dish.
- Arrange slices of lemon on top of the sautéed chicken breasts in the baking dish. Set aside.
- Pour the cup of wine into the used sauté pan and bring to medium heat. Bring to a boil. Let the wine reduce to about half the amount.
- Reduce heat to simmer. Melt in the second 4 Tbs of butter. Stir in the lemon juice, 2 tsp sugar, and remaining left over flour mixture. Whisk until smooth. Add salt and pepper to taste. Add extra lemon juice, sugar or white wine as needed to your taste.
- Pour sauce over the chicken with lemon wedges in the baking dish. Cover with foil.
- Bake for 30 mins at 350. Remove foil, bake for 5-10 more minutes without foil.
- Serve with rice, polenta or mashed potatoes. Pour extra sauce over chicken when serving and top with chopped parsley.
