My friend, Hilary, shared this recipe with me. It is a great weeknight meal because it takes so little time to make. Serve with some rice and roasted vegetables — and dinner is served.
INGREDIENTS:
- 3 Tbs toasted sesame oil
- 1/2 cup firmly packed light brown sugar
- 1/4 cup soy sauce
- 1/4 cup white miso paste
- 3 Tbs Sriracha
- 1 clove garlic, minced
- Nonstick cooking spray
- 6 (6 oz. each) salmon fillets, about 1″ thick
- Sliced green onions, and sesame seeds (optional), for garnish
DIRECTIONS:
- Preheat broiler and put a rack 6″ from the heat.
- In a small nonreactive mixing bowl, combine the oil, brown sugar, soy sauce, miso paste, Sriracha, and garlic.
- Spritz the broiling pan with nonstick cooking spray and place the salmon on the pan; then brush some sauce on the fish.
- Broil until the fish flakes easily at the center of the fillet, basting twice more with the sauce. Broil about 9-10 minutes, but don’t overcook!
- Garnish with green onions and sesame seeds.
