Let’s make the most of corn season before it ends with this 1-2-3- easy-peasy recipe that your kids will love. I suggest substituting a store-bought rotisserie chicken tossed with a little KC Masterpiece (my husband’s personal fave). You may want to double the recipe if more than 4 people. INGREDIENTS:
- 1 1/2 cups cooked quinoa
- 1/2 cup fresh corn, cut from the cob
- 1/2 cup black beans, rinsed and drained
- 1 cup shredded BBQ chicken
- 1 avocado chopped
- 3-4 tablespoons White Cheddar cheese, shredded (you can also use Cotija)
- BBQ sauce
- 2 scallions, chopped (I skip, so my kids will eat it)
- Cilantro for garnish (optional)
DIRECTIONS:
- In a large bowl, toss together the quinoa, corn, black beans, chicken and avocado. Season with salt and pepper
- Transfer mixture onto a serving bowl and top with shredded cheese, BBQ sauce drizzle, scallions and cilantro.
