The Dish | Christmas Salad

This salad delivers for the holiday season – filled with seasonal winter goodies and a perfect combo of savory and sweet.

INGREDIENTS:
  • 3 heads Belgian endives
  • 1 Granny Smith apple – diced
  • ½ cup candied pecans
  • ¼ cup blue cheese – crumbled
  • ½ pomegranate – peeled and seeded
  • Fresh mint leaves – chopped, for garnish

For the dressing:

  • ¼ cup olive oil 
  • 1 orange – juiced
  • 1 tablespoon honey 
  • 1 teaspoon dijon mustard 
  • 1 small shallot – minced
DIRECTIONS:
  • Chop endive leaves 
  • In a large bowl, combine the apples, endive, pomegranates, pecans and blue cheese. In a separate bowl, whisk together the olive oil, orange juice, honey, dijon, and minced shallot.
  • Pour ½ the dressing over the other ingredients and gently toss. Add more dressing if needed.
  • Garnish with freshly chopped mint. Enjoy!
