The Dish | Chocolate Banana Bread

My son’s best buddy Sully loves this banana bread. I used to make it for them in high school all the time. I think Sully actually ate an entire loaf himself.  This recipe makes two loaves — one for us one for Sully!

Ingredients:

  • 2 cups granulated sugar
  • 1 cup butter, softened
  • 3 cups mashed bananas (5-6)
  • 4 eggs well beaten
  • 1/4 cup sour cream or whole plain Greek yogurt
  • 1 tsp vanilla
  • 2 1/2 cups cake flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 bag (12 oz) of chocolate chips or peanut butter chips

Directions

Preheat over to 350′. Lightly grease 2 loaf pans.

With electric mixer cream together sugar and butter beat until fluffy. Add sour cream/yogurt beat another minute. Add bananas, sour cream, eggs and vanilla and mix until all incorporated.

Whisk together flour, baking soda, salt and cinnamon. Add dry ingredients to wet ingredients by hand — do not use mixer and do not over mix!

Add chocolate or peanut butter chips.

Pour into pans and bake for 45-55 minutes – until firm in center and edges begin to separate from pan. Cool on rack completely. These freeze beautifully.
