This is a family favorite that is a staple at summer gatherings. The best advice is don’t worry about measurements, mix and taste, and add more of whatever flavors you like! This keeps so well in the refrigerator for days and is a great one for lunches or dinner sides.
INGREDIENTS:
- 1 lb dried orzo pasta
- 1 jar julienned sun-dried tomatoes packed in oil
- 1 cup toasted pine nuts
- 4 green onions (sliced thin)
- 1 cup crumbled feta cheese
- Sliced fresh basil — as much as you like
- ½ cup olive oil
- ½ cup balsamic vinegar
- Kosher salt to taste
DIRECTIONS:
Cook the pasta according to the package directions and let it cool completely. Add the sundried tomatoes (including the oil in the jar), feta cheese, pine nuts, and green onions. Mix well. Add the olive oil and balsamic vinegar, then mix. Add more of either oil if the salad seems dry. Add salt to taste and top with fresh basil.
