This was a favorite in my family growing up. Don’t be afraid of these 70’s ingredients – this soup blends together to form the best, most flavorful, and filling meal. So easy and freezes well. You can be very lenient with quantities – add more ground beef if you want, etc.
INGREDIENTS:
- 1 pound ground beef
- 1 large yellow onion, chopped
- 2-3 garlic cloves chopped
- 1 carrot grated
- 1 cup chopped celery
- 1 cup pearl barley, soaked in water for at least one hour
- 1 large can (64oz) tomato juice (V-8 or Campbell’s brand are fine)
- Grated parmesan cheese for serving
DIRECTIONS:
- Sauté the onion and garlic together, and add the ground beef and cook till browned.
- Add to a large pot and add all remaining ingredients. Simmer for one hour until the soup thickens.
- Sprinkle with Parmesan and serve with bread.
