Rain may cloud the forecast but you can still find the silver lining by grilling up this family favorite. Smoky, spicy, and tender — this recipe packs bold flavor with every bite. Serves 6.
INGREDIENTS:
- 3 lbs flank steak
Lime Chipotle Sauce:
- 1/2 cup honey
- 2 tablespoons pureed chipotle chilies in adobo sauce
- 3 tablespoons balsamic vinegar
- 2 tablespoons Dijon mustard
- 1/2 cup fresh lime juice
- 1 1/2 tablespoons garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon allspice
- 1/4 cup chopped fresh cilantro
- 1 teaspoon salt
- Black pepper to taste
Chipotle Marinade
- 2 tablespoons puréed chipotle chilies in adobo sauce
- 1 tablespoon garlic, minced
- 3 tablespoons chopped fresh cilantro
- 1/3 cup olive oil
- 3/4 cup red wine vinegar
- 1/2 cup soy sauce
- 1 teaspoon salt
- 1/2 teaspoon pepper
DIRECTIONS:
Lime Chipotle Sauce:
- Combine all ingredients in a large measuring cup. Microwave for 30 seconds to warm the honey.
- Stir until well combined. Set aside. Can be made several days in advance.
- Serve at room temperature.
Chipotle Marinade:
- Combine all ingredients and pour over steak in a marinating container.
- Marinate at least 2 hours or longer.
Preparing and serving:
- Heat the grill. Cook the steak, turning once, for 6-8 minutes depending on thickness, for medium rare.
- Let steak stand, covered with foil, for 5 minutes.
- Slice in thin strips and serve with Lime Chipotle Sauce
