Recipe | Gluten-Free Blondies

A tasty, healthy alternative to traditional blondies. A blondie is similar to a brownie but typically uses vanilla and brown sugar instead of cocoa. Chickpeas are the secret ingredient that makes these GF.

INGREDIENTS:

  • 1 can (15 oz) chickpeas (rinsed and drained)
  • 1/2 cup almond butter (or any of your favourite natural nut butters)
  • 1/3 cup maple syrup (you can also use honey)
  • 1 tbsp sugar (I used coconut sugar)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup chocolate chips (I used Lily’s brand stevia chocolate chips for a healthier alternative)

DIRECTIONS:

  • Preheat oven to 350′.
  • Oil an 8-inch square pan.
  • Put all ingredients (minus the chocolate chips) into a blender or food processor and mix until smooth.
  • Give the batter a taste and tweak it to your liking. To mask any lingering chickpea taste add some extra nut butter and sweetener.
  • Fold in chocolate chips or save them for the top (or do both).
  • Transfer batter to pan and bake for 20-25 minutes (baking time may vary depending on the size of pan that you use. The top should by hard and turn a lighter golden brown).
  • Allow to cool and then cut up and enjoy!
